How to Clean a Commercial Kitchen Hood

Having a functioning, clean commercial kitchen area in your restaurant is incomplete without a proper cleaning of the kitchen hood. In this post we take a look at the procedure your commercial cleaning team needs to take to ensure your commercial kitchen is clean.

6 Steps to a Clean Commercial Kitchen Hood

It is natural for the hood to get contaminated and greasy which results in blocking the passage of fresh air in the kitchen and giving the kitchen an ‘unclean’ appearance. Today we are taking a look at the steps a commercial cleaning company should take to clean the hood properly.

Step 1 – Prepping to Clean

Turn off all the switches, valves, and ranges and wait for the system to cool down. Check that no device near you is turned on. Next, prepare the materials you will need. These include:

• Sheets of plastic
• Degreaser concentrate
• Soft brush
• Rubber gloves for safety
• Bucket for sanitization

Step 2 – Filter cleaning

Remove the filters and look for debris near grease traps. Use a soft-bristled brush to cleaning the filters.

Depending upon the level of grease in the filter, you can wash them in the dishwasher or apply a degreaser concentrate. If the latter, you will need to let filters sit in the solution for a minimum of 3 hours.

Step 3 – Cleaning the grease trap
Remove the grease traps which are typically located on each side of the hood. Be careful during removal to prevent grease from spilling. Use a box or bucket to dump the grease. Do not put grease into any plumbing.

Once the grease is removed, soak the traps in a degreaser solution for a minimum of 3 hours.

Step 4 – Cleaning the fan
Cleaning the fans is really about cleaning the fan covers. Following a similar process as cleaning the filters and grease traps, we remove the fan covers and scrub them with a soft brush. This is followed by a soak in a degreaser solution for a minimum of 3 hours.

Step 5 – Cleaning the duct
In this step are using the degreaser solution again but we are using it as a scrubbing agent to clean the ductwork with a brush or non-abrasive scrubbing pad.

Step 6 – Rinse and reinstall
Once your filters, grease traps and fan covers have soaked for the allotted time and allowed them to dry, we reassemble the hood. Clean the floor and mop the area around the kitchen hood and remove all cleaning materials from the commercial kitchen.
